Chicken Tikka Masala


Has a meal ever changed your life? Like, changed the things you thought about food before that?

I am NOT a picky eater. At all. But let me tell you honestly, because we're friends and I know you'll keep my secret. Before this meal I was not that in to Indian food. I didn't grow up eating it (ever) and was just never really wanting to go try it. 

We randomly went to Saffron a few months ago and my world was rocked. I mean, now I can't get enough of this stuff. I must have made this knock-off chicken Tikka five times since then. Seriously. 

Easy meal? Yep. 
Quick? Yep. 
Flavorful? Yep. 
Healthy? Yep. 

I mean really, what's not to love?

Chicken Tikka Masala
2-3 boneless, skinless chicken breasts
4 cloves minced garlic
1 chopped onion
2-3 tbsp. finely chopped ginger
1 cup plain Greek yogurt
1 29 oz can tomato purée or sauce
1 tbsp. olive oil
2-3 tsp. cayenne pepper (this is the HEAT) (whichever really isn't that strong)
2 tbsp. Garam Masala
1tbsp. Cumin
tbsp. paprika
2 tsp. salt
1 tsp. cinnamon
1 tsp. black pepper
2-3 bay leaves
1 cup half and half (or milk, or cream)
3 tbsp. cornstarch
Cilantro for prettiness

How wide range of ingredients. The good news - most of these are really common. Those that aren't are spices and will last you approximately 43 years. 

The cast. 

First add the chopped onion, garlic, and ginger. 

Tomatoes and Yogurt. Those don't often come to my mind together. 

Add the five bazillion spices. 

Mix it all up. 

Add the cut up chicken. 

Good things take time. I'm not patient,  but this is perfect when I go to work. 

Mix the starch and milk together. Awesome thickening sauce. 

Thicken it up. Add it in and let it sit another 10-15 min. Take out the bay leaves. 

Dish up on top of rice or quinoa. Add cilantro for color. And because it tastes great! 

Method one - Mix and dump all ingredients (except cornstarch and half and half) in the crockpot and cook for 8 hrs on low.

Method two - Mix and dump all ingredients (except cornstarch and half and half) i in a 9 by 13 pan and cook at 375 for 30-45 min.

Make Ahead Freezer Chicken Dinners

In an effort to be more organized and healthy and less stressed, I decided to make a few freezer meals to use as school starts back up. This week we went to Costco and bought a TON of chicken and I decided I wanted to come up with some new ways to make it. After looking through many blogs, cookbooks, and pinterest links, I found my favorite 5 (with some modifications) to give a go.

I did this before school started in August and really appreciated having dinner already mostly made after a long day at school. Some of my favorites then were meatballs and beef stroganoff and enchilada chicken. But, now I'm trying to be healthy. They all sound good, I'm just not sure what the end result will be.

And I've decided that 5 make ahead meals is a great amount. 8 last time was a little overwhelming. This, this was doable. I was able to get everything prepped in just over an hour.

This is my counter after laying out all of the ingredients. Plus there's a new bag of dog food at the end. Just FYI - that's not for any of the meals.


Okay, the first meal that we LOVE and have made multiple times is Enchilada Chicken. It's super easy - take a can of enchilada sauce, a small can of green chilies, and a packet of taco seasoning and add 4 chicken breasts. Place in a ziplock bag, get the air out, and zip. When you want to cook it, let it thaw in the fridge, and cook in a slow cooker on low for 6-8 hours or in the oven at 350 for 15-20 min.


This is the "finished" product for today.


So this one is Garlic Dijon Chicken. All it is is 3 chicken breasts cut in half, juice from two limes, 5-6 cloves of minced garlic, and 4 tbsp. of dijon mustard. Put it in a bag and either freeze or keep in the fridge until you're ready to cook it. Bake everything in the bag in the oven at 350 for 20-30 min.



Here's the "unfinished" product. Which is not so pretty. But I BET it will taste great!



This is Honey Sesame Chicken. Chicken in beer? Sounds SPECTACULAR!! It's 2-3 chicken breasts cut in half, 3 tbsp. of dijon mustard, 3 tbsp. of sesame seeds, 4 tbsp. honey, 1/2 c. beer, and 2 minced cloves of garlic. Put it all in a bag and freeze. Thaw and cook in the oven at 350 for 20-30 min.


nom nom nom. I heart beer and sesame seeds. I just hope it freezes well.


This chicken sounds AWESOME. However, I may have to make it a second time to see how it really tastes. As I was mixing all of the ingredients together for this one, I may or may not have pushed too hard on the bag and had teriyaki and pineapple sauce go everywhere. Oh well!! Note to self - double check that your bag is completely sealed.

This is a basic teriyaki chicken. It's 4 chicken breasts cut in half, a can of pineapple chunks with the juice, 2 minced cloves of garlic, 1 cup of teriyaki sauce, 1/2 a red onion cut in chunks, and a small bag of baby carrots. Just put it in the slow cooker for 6-8 hours on low.


Post spillage. I was able to replace some of the teriyaki sauce, but not the pineapple juice. Bummer.


This is the one I am the most excited to try. Cilantro Lime Chicken. To a bag add 4 chicken breasts cut in half, 1/2 red onion cut in chunks, 1 bunch of cilantro, 2 limes, 2 minced cloves of garlic, 12 oz bag of frozen corn, 1 can of drained and rinsed seasoned black beans, 1 tsp. cumin, and salt and pepper to taste. Add to the bag, then when you want to cook it, slow cook for 6-8 hours on low.


YEAH BABY! I heart cilantro. It's fantastic. And this bag - colorful like woah!


Here they are, all lying flat in the freezer ready to go. Woo woo! This makes the sting of winter break ending a little less strong.

Ranch Crock Pot Pork Chops




There's nothing better than an easy dinner that I feel like I don't even have to make. I've been really into using the Crock Pot lately - for some reason it's always Wednesday. Maybe because it is the middle of the week, maybe its that I'm lazy. Whatever it is, it has been a blessing. I feel like God makes me dinner every time I walk in the door, because it's already ready!


All you need for this recipe is 4-6 pork chops, a can of cream of chicken soup, and a ranch packet. That's it! I love this recipe. Its pork, its ranch, its gravy, its perfect.


Here's the hard part. Put the chops in the crock pot, followed by the soup. Last, add your ranch packet. Cover and let it cook on low for 6-8 hours.


Leave for work. Forget about your dinner - or think about it all day like I do. Come home and smell the greatness. It's ready to go.

Put it on mashed potatoes. You could do rice, but buttery mashed potatoes are SO good and comforting.


GAH. So easy. So delicious.

Buffalo Chicken Sandwiches



We've all had horrible mornings. Sleep through your alarm. Spill a smoothie on yourself. Have to change. Spill amazing iced coffee on yourself. Have to change again. Hit every red light. Then get stuck in traffic due to an accident. And then show up to work as the bell rings to find out all of your plans have been changed due to someone getting sick. 


Oh, you haven't had a morning like this? Well this was my morning. Thank goodness we had a special day where I was able to get a lot done during the day, and I put dinner in the crock pot before I left. I swear, I would've cried if I had to make dinner after today.


Today's dinner, buffalo chicken sandwiches, was EXTREMELY easy. Like 5 minutes in the morning, 5 minutes at night easy. And it only has 5 ingredients!





Get together the morning ingredients - 3 lb. bag of frozen chicken breasts, ranch packet, and a regular bottle of Frank's Hot Sauce.




Put your chicken in the crock pot. That's right. Put it in there still frozen. For those of you as lazy as I.




Put the sauce on the chicken.




Put the ranch on the chicken.




Put the lid on and walk away. I mean it. Walk away for at least 8 hours.




Come home. Take a deep, deep breath and inhale the delicious scent that fills your kitchen. The hubster said that this is one of his favorite scents of all times. I think if I had chicken wing scented perfume, he would've married me even sooner.





Take the chicken out of the crock pot and shred it all up. Resist eating it now.




Put it all back in the crock pot and mix it together. This way the chicken soaks up all of the flavor in the pot. 




Toast a bun and place a piece of cheese on it. We were feeling spicy tonight, so we went with pepper jack. Any cheese would do!




Pile on your chicken. Add the top bun and enjoy!
